For a Special Dinner

{ shrimp curry over nero di seppia pasta with balsamic mushrooms }


Shrimp curry usual match is white rice, for it gives it the perfect element of contrast to relate to. This time we're spicing things up by giving it a richer base to develop its flavours from. I now find that the mushrooms actually take it over the top, they would likely go better with white rice, indeed.

This was yesterday's special dinner :)


gambas de caril em cama de massa nero di seppia,
com cogumelos balsâmicos.

150g de linguine nero di seppia
350g de camarão médio
3 dentes de alho
azeite
150 ml de natas
1/3 de chávena de vinho branco
1 colher de sobremesa de caril
1 pitada de noz-moscada
200g de cogumelos shiitake
100g de cogumelos brancos
1 colher de sopa de creme balsâmico
pimenta
sal


Cozer a massa al dente em água temperada com sal. Quando cozida, escorrer e misturar um pouco de azeite para não colar.
Laminar os cogumelos e saltear em azeite com um dente de alho picado, temperados com sal e pimenta. Reservar.
Noutra frigideira, refogar o caril e a noz-moscada em azeite com o restante alho picado.
Juntar o camarão e deixar saltear até perder o tom rosado, refrescar com vinho branco e deixar cozinhar.
Juntar o creme balsâmico e 25 ml de natas aos cogumelos, misturar e levar ao lume para espessar um pouco.
Juntar as restantes natas ao camarão, misturar bem e deixar espessar.
Formar um ninho de linguine nos pratos, colocar o caril no centro e rodear uma parte com os cogumelos balsâmicos. Servir.

shrimp curry over nero di seppia pasta nest,
with Balsamic Mushrooms.

150g nero di seppia linguine
350g medium shrimp
3 garlic cloves, chopped
olive oil
150 ml heavy cream
1/3 cup white wine
1 big tsp curry
1 pinch nutmeg
200g shiitake mushrooms
100g white mushrooms
1 tbsp balsamic cream
pepper
salt


Boil the pasta al dente in water, seasoned with salt. Once cooked, drain and add some olive oil so it doesn't stick together.
Laminate the mushrooms and sautée them in olive oil together with a third of the garlic, salt and pepper. Set aside.
In a second pan, heat the curry and the nutmeg with the remaining garlic until fragrant,
Add the shrimp and let cook slightly, until it loses its rosy colour. Add the white wine and let cook,
Add the balsamic cream and 50 ml heavy cream to the mushrooms, stir and take to the heat to thicken slightly.
Add the remaining heavy cream to the shrimp, mix well and let thicken.
Make a pasta nest over each plate, place the curry in the middle and the mushrooms encircling one side. Serve.

    Que lindo casamento as gambas com o Nero di Seppia, que para além de ter uma bela cor, também se deixa perfumar pelos cogumelos!
    Diria que ele, o Nero, é uma pouco..."bi" , ihihih!
