on superfoods, reconnecting and why summer is the perfect time to feel healthy.

Quinoa and mushrooms blend great together, both in terms of flavour and texture, somehow inducing a sort of nostalgia for that good old mushroom risotto. The topping, like an unfinished guacamole, is absolutely perfect: the chopped onion and garlic give it an extraordinary kick and the poweful zest of lemon, as always, goes great with avocado.

I remember completely underrating those big summer holidays as a kid. In middle school, we had some two or three months of holidays, but all I could think of was getting back to school and seeing my friends again. This attitude sounds more reasonable, though, if I tell you that my parents would roughly have a month of holidays, and that, until they were free, all my brothers and I could do was to hang around the house. Once in a while, I'ld go out with them or some friends, but we would mostly just stay home until August. To tell the truth, being somehow held at home during half of the summer is in part how my passion for cooking developed.

yesterday, while scrolling down my facebook feed, i read something that made me feel home at heart.

it was the title of an article about an upcoming book by Nelson Carvalheiro - a portuguese blogger, - about Portugal, food and travelling. as one could there read, the author believes that, especially in the north of the country, the portuguese say 'i love you' by setting food on the table and inviting you to eat it.'

this couldn't have been said better.

um risotto herege...

{ an heretic mushroom risotto }

(finally back from the thesis ermitage!)

There is something that I really like to cook but rarely take pictures of.
Usually I have no time to take nice pictures of it, because I really want it to be served right away.
And, truth to be told, you just need the perfect plating and light to shoot this - and this is something quite not attainable when you are just in a hurry to put it on the table.
I'm talking about risotto.

Today the sunlight was just right, so I had to shoot it and bring the recipe here. This is a recipe that changes all the time... I usually use white wine, preferably sparkling one, and I usually use other kinds of cheese, I change the seasonings and herbs all the time, so I just brought the exact (odd) recipe I came up with today - it is really odd, you'll see...

Because today was a lazy holiday day, sleeping in, doing nothing, and eating a bowl of this in a sunny balcony suited it just perfectly.

{ one-pot primavera pasta }

Don't know what to cook for dinner?
I had taken a peek at something quite similar on this website just yesterday, so I was like... well, why not? In the end I found it such a easy-peasy funny little thing that I had to share it with you ;) One-pot and no stirring is quite a ease of mind to me sometimes, especially when it's just me for dinner, and this dish is effortless delight.



One-Pot Primavera Pasta
- 70g de penne integral
- meia courgette, cortada em rodelas finas
- 7 cogumelos, laminados
- 1 cenoura pequena, picada
- 1 dente de alho, laminado
- 1 + 1/2 chávena de água
- 1 colher de sopa de azeite
- sal

- 2 colheres de sopa de quark, natas ou leite
- mistura de pimentas, moída na hora
- parmesão ralado q.b.

1) Colocar todos os ingredientes da primeira lista numa panela,
2) Levar a ferver e deixar cozinhar com a panela tapada cerca de 8-10 minutos,
3) Escorrer bem se houver água restante,
4) Misturar o quark e a pimenta,
5) Servir polvilhado com bastante parmesão.

One-Pot Primavera Pasta
- 70g wholewheat penne
- 1/2 zucchini, thinly sliced
- 7 mushrooms, thinly sliced
- 1 small carrot, chopped
- 1 garlic clove, thinly sliced
- 1 + 1/2 cup water
- 1 tbsp olive oil
- salt

- 2 tbsp quark, cream or milk
- freshly ground pepper
- ground parmesan

1) Place all ingredients of the first list in a pot,
2) Take to a boil, cover and let simmer for 8-10 minutes,
3) Drain remaining water if necessary,
4) Mix in quark and pepper,
5) Serve with plenty parmesan cheese on top.

the italian job

{ mushroom, dried tomato and mozzarella risotto }

I don't know if the owners are aware of this yet - well... they should, considering the amount of times I've been sticking around, over pots and pans - but I really like this kitchen! It is really cozy and it's quite nice to cook there. Who knows, maybe it's the Italian aura - yes, the owners are quite nice too!
So yesterday I decided to make a surprise dinner there and I ended up choosing all Italian food. This meant whipping up risotto and pannacotta for three Italian - plus one canadian ;) - and very demanding judges. Quite demanding. Call me wary, but didn't you know how italian guys are harsh on "pseudo-italian food" made by non-italians? Worth hearing. Anyway... somehow, maybe because I was being nice and well-intentioned, I was told it was good...



Risotto de Cogumelos, Tomate Seco e Mozzarella
- 500g de arroz arbóreo
- 3 dentes de alho, picados
- 300g de cogumelos frescos, finamente laminados
- 8 tomates secos de frasco, cortados em tiras
- 1 embalagem de bolinhas de mozzarella fresco
- 70g de queijo maasdammer, em pequenos pedaços
- 1 cubo de caldo de galinha
- 200ml de vinho branco
- 2 colheres de sopa de polpa de tomate
- água fervente
- azeite
- orégãos e manjericão
- mistura de pimentas, moída na hora
- sal

Refogar os cogumelos e o alho em azeite com os temperos e o caldo de galinha até estarem tenros; escorrer e reservar o caldo resultante e os cogumelos separadamente,
Levar um tacho anti-aderente a lume brando com o arroz e o caldo dos cogumelos, mexendo até este ter sido completamente absorvido,
Juntar aos poucos o vinho, mexendo e deixando absorver,
Juntar aos poucos a água quente e a polpa de tomate e ir mexendo, até o arroz estar praticamente cozinhado e ainda ter um pouco de água,
Incorporar os cogumelos e o tomate seco,
Juntar o maasdammer e misturar bem,
Por fim, juntar o mozzarella fresco e misturar novamente,
Servir imediatamente.

Mushroom, Sun-dried Tomato and Mozzarella Risotto
- 500g arborio rice
- 3 garlic cloves, chopped
- 300g mushrooms, thinly sliced
- 8 sun-dried tomatoes, jar kind, sliced
- 1 pckg small mozzarella balls
- 70g maasdammer cheese, chopped
- 1 cube dried chicken stock
- 200ml white wine
- 2 tbsp tomato paste
- boiling water
- olive oil
- oregano and basil
- mix of peppers, freshly ground
- salt

Sautée the mushrooms with the garlic in olive oil with the seasonings and the chicken stock until tender, drain and set aside the resulting stock and the mushrooms, separately,
Heat a non-sticking pan over medium heat and mix the rice with the stock until absorved,
Pour the wine bit by bit, mixing and letting the rice absorb it,
Follow with the hot water and the tomato paste, until the rice is practically cooked and there is still some water left,
Mix in the mushrooms and the tomato,
Add the maasdammer and mix well,
At last, mix in the fresh mozzarella,
Serve imediately.

Colorful inside

{ turkey and vegetables pie }

Estes últimos dias têm sido de estudo e de trabalho em geral.
Este fim-de-semana foi dia de voluntariado no Serralves em Festa.
Ontem, dia de Portugal, foi dia de folhado de carne...



Tarte Folhada de Perú e Legumes
Ingredientes:
- 1 embalagem de massa folhada fresca
- 1 naco grande de perna de perú já assado + 2 colheres de sopa de molho do assado
- ½ cebola, laminada
- 3 dentes de alho, picados
- 1 cenoura grande, ralada
- 1 cabeça de bróculo com folhas, cortada em pedaços
- 4 cogumelos frescos, laminados
- 1 colher de chá de molho de soja
- ½ colher de chá de piri-piri líquido
- noz moscada, cominhos, sal
- pimenta preta
- azeite q.b.

Preparação:
1) Desfiar a carne de perú em pedaços pequenos
2) Refogar a cebola e o alho com sal em azeite,
3) Juntar a cenoura, a noz moscada e os cominhos e deixar cozinhar (se necessário acrescentar um pouco de água),
4) Acrescentar os bróculos e os molhos líquidos e deixar cozinhar mais um pouco,
5) Reservar,
6) Aquecer a carne no molho, juntar os cogumelos e a pimenta (se necessário mais um pouco de azeite ou água) e deixar cozinhar, tapado,
7) Reservar,
8) Estender a massa. Se for redonda, cortar uma tira de cada lado em forma de D, cortar ao meio cada tira e colar nos topos circulares do resto da massa,
9) Dispor a carne sobre a massa numa camada regular e estreita, num dos lados do rectângulo visto ao alto,
10) Dispor os vegetais sobre a carne,
11) Cobrir com o lado oposto da massa, dobrando-a, e selar bem os limites,
12) Fazer cortes transversais no topo para deixar o ar sair,

13) Cozinhar no forno a 180ºC – 200ºC durante cerca de 20 minutos ou até estar dourado e bem folhado.


Turkey with Vegetables Pie
Ingredients:
- 1 pckg pie crust
- 1 big piece of roasted turkey + 2 tbsp of the roast drippings
- ½ onion, laminated
- 3 garlic cloves, finely chopped
- 1 big carrot, grated
- 1 broccoli head with leaves, chopped
- 4 fresh mushrooms, laminated
- 1 tsp soy sauce
- ½ tsp tabasco
- nutmeg and salt
- black pepper
- olive oil q.b.

Preparation:
1) Tear apart the meat down to small pieces,
2) Sauté onion and garlic with salt in olive oil,
3) Add carrot and ground nutmeg and let cook,
4) Add broccoli and liquid sauces and let cook,
5) Put aside,
6) Heat the meat on the drippings, add mushrooms and pepper and let cook, covered,
7) Put aside,
8) Spread the crust,
9) Place the meat over half of the crust in an uniform layer,
10) Place now the vegetables over the meat,
11) Cover this half with the remaining crust, folding it, and seal the lining
12) Make transversal cuts on the top for the air to exit the interior,
13) Cook at 180ºC to 200ºC in the oven until golden and crispy, around 20 minutes.

Little pleasures...

{ mushroom and chèvre bruschettas }

... numa ideia para aperitivo, um acompanhamento diferente, ou para acompanhar uma salada ;) Aqui com uma fatia de lombo com molho de tomate e pimento e uma salada.

... from an idea for an appetizer, a different side dish or to go with a salad ;) Here with pork loin with tomato and red pepper sauce and a salad.




Bruschettas de Cogumelos e Queijo Chèvre
6 fatias de pão da avó/rústico
10g de manteiga
1 colher de café de massa de alho
½ colher de café de ervas de provence
100g de cogumelos frescos, laminados
3 dentes de alho, finamente picados
½ colher de café de manjericão
50g de queijo chévre
azeite

Forrar um tabuleiro de forno com papel de alumínio,
Espalhar as fatias de pão sobre o tabuleiro,
Saltear os cogumelos com o alho, o manjericão e um fio de azeite,
Derreter a manteiga com as ervas de provence e a massa de alho,
Cortar o queijo em pequenos cubos,
Barrar o pão com a manteiga derretida,
Espalhar os cogumelos e o queijo sobre o pão,
Levar ao forno a 200º/250ºC até o pão estar tostado e o queijo semi-derretido.

Mushroom and Chèvre Bruschettas
6 artisanal bread slices
10g butter
1/2 tsp garlic paste
pinch of herbes de provence
100g fresh mushrooms, sliced
3 garlic cloves, finely chopped
pinch of basil
50g chèvre cheese
olive oil

Line a baking tray with aluminum foil,
Spread the bread slices on the tray,
Sauté mushrooms and garlic with basil and a little olive oil,
Melt butter, garlic paste and herbes de provence,
Chop the cheese down to small cubes,
Spread the butter onto the slices,
Spread mushrooms and cheese over each one,
Place in the oven at 200º/250ºC until the bread is toasted and the cheese is half melted.
