If you keep updated on the latest cooking trends, you can't help but feel like brown butter is everywhere. I am guessing this actually started a couple of years ago, maybe even a couple couple of years ago, but with all these HuffingtonPost/Vogue/Buzzfeed/whatever food threads and all, one can't help but feel like it is everywhere - from the usual cookies to pasta. But do you really know what brown butter is? Continue reading to learn more about it - and find out how to make it.


Brown butter, or beurre noisette, is a sort of clarified butter. Clarified butter is obtained by gently heating butter while stirring, when the milk solids separate from the butterfat. At this point, after removing the milk solids, clarified butter can be used to fry without burning, unlike regular butter. It has a characteristic light golden colour and it is liquid. To make brown butter, however, will want to use these milk solids. Brown butter is melted and heated the same way as clarified butter, except that one must heat it after the point of sepparation, so that the milk solids that sunk down to the bottom of the pan brown. It has a characteristic amber colour and nutty scent and flavour. This makes brown butter perfect for cookies, blondies and even for cooking, especially in sauces.

A manteiga dourada, beurre noisette, é um tipo de manteiga clarificada. A manteiga clarificada é obtida pelo aquecimento de manteiga, quando os sólidos de leite se separam da gordura. Neste ponto, após remoção dos sólidos de leite, a manteiga clarificada é ideal para fritar, pois, ao contrário da manteiga normal, não se queima. Tem uma cor dourada clara característica e é líquida. No entanto, para obter manteiga noisette, estes sólidos de leite são fundamentais. Tem uma cor âmbar e um sabor e aroma semelhante ao de avelãs muito característicos. Isto torna a manteiga noisette ideal para cookies, blondies e até mesmo para cozinhar, por exemplo em molhos.

Brown butter is actually really easy to make. It just takes some patience for stirring, and for waiting for it to cool down after. But no worries. The awesome nutty flavour will make up for it all!

Pesar ou medir a quantidade de manteiga necessária para a receita escolhida (imagem 1). Cortar a manteiga em pedaços e colocar num tacho largo. Levar a lume médio-alto, mexendo sempre com um fouet. A manteiga começará por derreter e borbulhar (imagem 2). Após alguns minutos a espuma da superfície estará mais espessa e controlada, e a manteiga dourada-transparente. Os sólidos de leite começarão a ser visíveis, dourando, e a manteiga terá um aroma intenso a avelãs (imagem da capa). Neste momento é muito importante retirar a manteiga do lume e transferir para uma taça limpa, para que não queime. Deixar arrefecer antes de usar.

Measure the desired amount of butter (image 1). Chop the butter and place it into a large saucepan. Heat over medium-high heat, stirring constantly with a wire whisk. The butter will melt and become all bubbly (image 2). After a few minutes, the foam will become thicker on top and less bubbly, and the butter will be golden and clear. The milk solids will deposit and become visible, browning, and the butter will have a strong nutty scent. At this point it is important to remove butter from the heat and transfer it to a clean bowl so it doesn't burn. Let cool before using.
