Mousse Overdose de Chocolate com Suspiros Dinamarqueses
Ingredientes:
- 400g de chocolate de culinária com 70% de cacau
- 50g de manteiga
- 8 ovos
- suspiros dinamarqueses q.b.
Preparação:
1) Bater as claras em castelo com uma pitada de sal,
2) Derreter o chocolate com a manteiga em banho maria, deixar arrefecer,
3) Bater as gemas,
4) Incorporar as gemas no chocolate aos poucos, batendo sempre, com cuidado para não coalhar,
5) Incorporar as claras no preparado anterior,
6) Deitar numa taça de vidro,
7) Partir os suspiros e espalhar sobre a mousse (ou fazer camadas intercaladas ao deitar a mousse na taça),
8) Levar ao frigorífico por 2 horas.

- 50g butter
- 8 eggs
- danish macarons
Preparation:
1) Whip the egg whites with a pinch of salt, until firm peaks form,
2) Melt the chocolate and butter over bain-marie and let cool,
3) Beat egg yolks,
4) Mix the yolks carefully into the chocolate, stirring constantly,
5) Fold in the egg whites,
6) Pour into a glass jar or bowl,
7) Break down the macarons and spread over the mousse (or make different layers while pouring the mousse),
8) Place in the refrigerator for at least 2 hours.
