Roasts are a hostess's best friend. No matter how much time they take to prepare, they always leave one free to mingle with the guests upon arrival, outside of the kitchen, as they require little attention once they are in the oven. This exotic chicken casserole actually needs quite a few checks but it much more handy - and fool proof - than cooking chicken curry for a crowd on the stovetop.

Gosto de ir à Queima do Porto apenas uma ou duas vezes por ano. Prefiro fazer férias o resto da semana. Este ano escolhi a noite do Rui Veloso, que foi ontem, porque nunca fui ver ao vivo e até gosto bastante.
Como já não fazia nenhum jantar lá em casa há imenso tempo, e adoro receber pessoas em casa e fazer jantares e lanches, achei que era uma boa ocasião para juntar alguns amigos. Não tenho fotos do jantar, mas improvisei algo que saiu bastante bem e decidi partilhar! O tempo esteve terrível toda a noite, chegámos a casa completamente ensopados apesar de impermeáveis, botas, guarda-chuvas...

I enjoy going to the "Queima do Porto" (university festival) only once or twice a year. I rather go on holiday the rest of the week. This year I had chosen Rui Veloso's night, yesterday, because I had never seen him live and I quite like him. As I hadn't throw a dinner at home lately, and I love to have guests and prepare dinners, I thought it was the right time to get together some friends. I don't have any photos, but I improvised something that turned out nice and I decided to share it anyway! The weather was terrible all night, we got home soaked to the skin even though we had raincoats, boots, umbrellas...

I want to share good news with you! My photo with M.'s gifts won the competition thrown by Joana Roque, from http://paracozinhar.blogspot.com, at facebook! I was so happy when I saw it!! :) If you want to see it, it's posted here and it's the last one.

I also wanted to thank everyone who's visited and all the people who have been giving me their opinion! That's the only way I can get better. This blog's idea is not primarily to show what I have been doing, but to share recipes to be used and abused, because I also like to search recipes, ways to use certain ingredients and mere inspiration!

frango exótico com caril no forno.
e os amigos em casa.

(para oito a dez pessoas)
1,5 kg de peitos de frango
600g de cogumelos
1 courgete
5 dentes de alho grosseiramente picados
1/3 de um pimento vermelho, finamente picado
3/4 de chávena de vinho branco
1 lata de leite de côco
1/2 chávena de côco ralado
óleo vegetal
caril
açafrão
pimenta
sal

Pré-aquecer o forno a 200º.
Num tabuleiro metálico grande e fundo, verter óleo suficiente para cobrir todo o fundo.
Cortar a carne e a courgete em cubos de dimensões semelhantes e espalhar sobre o tabuleiro.
Temperar com sal e pimenta, remexendo, e levar ao forno até o frango começar a perder a cor rosada, cerca de 10 minutos.
Entretanto, refogar o caril e o açafrão com metade do alho em óleo. Retirar o tabuleiro com o frango do forno e incorporar a mistura de caril com o vinho, aproveitando para transferir a carne do centro para os lados, de forma a que tudo cozinhe de forma homogénea. Misturar também o leite de côco no conteúdo do tabuleiro, mexendo novamente de dentro para fora. Deixar cozinhar mais 15 minutos.
Cortar os cogumelos em gomos. Juntar ao tabuleiro no forno, misturar novamente e deixar cozinhar mais 10 minutos.
Juntar o pimento vermelho e o restante alho, misturar, cobrir tudo com o côco ralado e deixar dourar mais uns 5 a 10 minutos.

(para oito a dez pessoas)
1,5 kg chicken breasts
600g mushrooms
1 zucchini
5 garlic cloves, roughly chopped
1/3 of one red pepper, thinly chopped
3/4 cup white wine
1 can coconut milk
1/2 cup shredded coconut
vegetable oil
curry
saffron
pepper
salt

Pre-heat oven at 200ºC.
In a deep metallic baking tray, pour enough oil to cover the entire bottom.
Dice the meat and the zucchini in similar sized pieces and spread on the tray.
Season with salt and pepper, stirring, and bake until the meat starts losing its rosy colour, about 10 minutes.
Meanwhile, sautée curry and saffron with a half the garlic in oil. Remove the tray from the oven and stir in this curry mix, together with the wine, transferring the meat from the center to the sides, so that all it cooks evenly. Let roast for another 15 minutes.
Cut the mushrooms into thick wedges. Mix into the roast and let cook for another 10 minutes.
Add the red pepper and remaining garlic, give it all a stir and cover with shredded coconut. Bake for another 5 to 10 minutes, until golden.

  2. Eu nunca fui à queima das fitas do Porto ( apenas fui à de Coimbra e Lisboa ) mas é sempre um evento engraçado, e mais ainda se recebes alguém e fazes das tuas delicias :)

    Muitos parabéns pelo premio, a receita que fizeste e as fotos estavam belissimas, por isso é bem merecido :)

    Não sei se já fizeste a sobremesa com o iogurte grego, mas deixo-te um sugestão...ou seja, um bolo de iogurte, mas com iogurte grego...fiz um à uns tempos e estava uma maravilha ;)
