{ apple caramel handpies }


do you still remember my pie baking frenzy for this party i threw over last december? i think i baked around six or seven different kinds of savoury and sweet handpies! after having tried at least a bite of each different sort of them, these were definitely my favourite ones - and mostly the favourites of everyone else who was lucky enough to choose them first over the rest of the desserts before they were all gone in less than three minutes.

if you make these, make sure you have some friends around, because you may be tempted to eat them all on your own. in a matter of hours. you were warned...

mini-tartes de maçã e caramelo

(base)
300g de farinha sem fermento
150g de manteiga, fria e aos cubos
100g de açúcar amarelo refinado
1 ovo grande

(recheio)
meia dúzia de maçãs golden
3 colheres de sopa de açúcar branco
1 colher de sopa de farinha
uma mão cheia de caramelos toffee, picados
sumo de limão

Colocar a farinha, a manteiga e o açúcar num robot de cozinha e picar até obter migalhas.
Adicionar o ovo e pressionar de novo até obter uma massa coesa.
Retirar a massa e formar uma bola. Reservar no frio.
Descascar e descaroçar as maçãs, cortar em pequenos cubos e marinar em sumo de limão para não oxidarem.
Juntar o açúcar, a farinha e os caramelos picados, misturando muito bem.
Estender a massa de tarte sobre uma superfície polvilhada com farinha, cortar círculos com um cortador circular e colocá-los em formas de muffins bem untadas, espalhando a massa; reservar um pouco de massa para a cobertura.
Encher cada forminha com um pouco da mistura de maçã e caramelo.
Cobrir com tiras de massa, entrançando-as.
Levar ao frio cerca de 15 minutos, pré-aquecendo o forno a 180-200ºC.
Levar ao forno até estarem bem douradas, polvilhar com açúcar em pó e servir.

(crust)
300g flour
150g butter, cold and diced
100g light brown sugar
1 large egg

(filling)
half a dozen golden apples
3 tbsp white sugar
1 tbsp flour
a handful of soft caramels, chopped
lemon juice

Press flour, butter and sugar in a blender until obtaining crumbles.
Add the egg and press again until it holds together.
Remove dough from blender and shape it into a bowl. Keep in the fridge.
Peel and core the apples, dice them down to small pieces and marinate it in lemon juice to keep it from oxidating.
Mix in sugar, flour and chopped caramels, blending everything well.
Roll the crust dough over a flour-dusted surface, cut small circles with a cutter and line the bottom of butter-greased muffin moulds with them; set some dough aside for the top.
Fill each pie with a spoonful of the caramel-apple mix.
Cover with layered stripes made from the remaining dough.
Refrigerate for about 15 minutes, pre-heating the oven to 180-200ºC.
Bake until golden, dust with confectioners' sugar and serve.
