I will not lie to you: making dumplings is not for the faint of heart. If shaping them requires some dexterous steady fingers, to get through the whole batch one must possess otherworldly perseverance and patience. The silverlining: it gets easier after the first couple of them, plus making the filling is a no-brainer! One thing you'll need is help: call your friends and family over to the kitchen, hand a different filling to each person in case you're making several sorts and let them choose their own dumpling design. And what's better than gathering everybody at the table and feasting on warm delectable homemade dumplings in the end? They are so worth the mess!

{ bolo de arroz: portuguese rice cake }



Bolos de Arroz, literally "rice cakes", are traditional Portuguese cupcakes, widely acknowledged as  a snack and not as a dessert. In Portugal, coffee is a formality after each and every single meal and it is drunk like a shot. The actual portuguese expression for drinking coffee is even - literally - 'taking coffee'. Yet the portuguese have a thing for coveting pastry trays while ordering their coffees, and when they lend more than two minutes to the act of washing them down, they might very well lower their voice a notch, gulp the guilt and order a Pastel de Nata or a Bolo de Arroz.
Usually served at breakfast and any time in the morning, while going out for an espresso after lunch, as an afternoon snack after school, but mostly appropriate for any occasion when hunger or a sweet tooth strike, these are nowadays probably one of the most simple, common and underrated cakes in the whole country.
I was curious to see if the batter would do well as a normal cake for slicing, so I decided to pour it into a loaf pan - and I have to say it worked just perfect. It is so simple to make it like this, that if you love Bolos de Arroz, or if you have never had one, you must try this recipe!

This cake is a winner. Its batter bakes beautifully, turning several shades of autumn leaves: from caramel brown on the outside to deep orange on the inside. It is easy and fun to make, even more impressive when sliced, and it will fill your kitchen with the soothing scent of spices. Its crumb is dense and moist, a bit like banana bread - but full of pumpkin spice love. The cheesecake filling baked inside the cake is compulsory, not only to add to the show factor, but also because it perfectly complements the taste of the batter. Fresh currants on top bring a nice zesty contrast to the whole.

The recipe for the Hummingbird Cake is said to have been first published in 1978 by the Southern Living magazine, and it has ever since become a staple in the Southern US cuisine. Packed with exotic flavours, this cake relies on a rather unusual combination of ingredients, starting with the fact that it asks for more fruit than flour. With banana, pecans and pineapple at its core, it's easy to imagine a dense cake with a compact crumb, however, this cake, will prove you wrong: it has a deliciously tender and slightly moist texture, which is just compact enough to make it a perfect candidate for layering and frosting! My staple mascarpone frosting is in the sweet spot between whipped cream and cream cheese, with a hint of lemon, vanilla and maple syrup, and the whole thing is taken to new heighs by all that caramel dripping on top! This cake had such wonderful layers of flavours that each bite was a different experience of yumminess. And on top of all, I can't help but being super proud of how gorgeous my first semi-naked cake turned out!

These vibrant coloured cookies are super fun to make, it feels like playing with play-doh! They take some time, but they are tremendoulsy easy to make and I love how everything worked out so well, especially since I made up the recipe from scratch! They are perfect for Valentine's Day, or for any other occasion, and you can dye and flavour them according to your preferences or what you have on your pantry. 'Bolo de Arroz', the portuguese rice muffin, ocasional replacement for a Pastel de Nata as a side for an espresso or a meia-de-leite, was the inspiration behind these mini gugels. I have spiced up the original recipe up and made it totally gluten and lactose free! Mini lemony cakes, with a texture similar to that of madeleines, they are the perfect as a coffee or tea-time treat and for sharing with friends!

Named after russian ballerina Anna Pavlova, this beautiful dessert is a sure crowd stunner. The ideal pavlova meringue has a crispy shell and a fluffy marshmallow-like interior. Don't panic if your meringue cracks - there really is something perfect about such imperfection. Sublimity can be easily achieved with a thick layer of lemon twisted whipped cream and an overload of fresh berries. I finished mine by pouring over a little port wine reduction and, inspired by the happenstance of the first snowfall of the season, I dusted it all with confectioner's sugar.

Miniature sized cupcakes are a whole lot of cute. I called these mini stunners 'autumn aura' because if autumn were a pallet of flavours, that of this cupcakes would be there, side by side with roasted chestnuts and pear compote. Behold the beauty of these tiny things, the dash of coconut on top lending them a snowish appeal. Bite into the delicious balance between a moist peppery pumpkin cake and a thick vanilla cream cheese frosting. And you wanna know what...? They are also gluten-free.

Let's not go in denial here. October is World's Pumpkin Month and that the way it is. After accepting it and finally resigning - with an unexpectedly fierce enthusiasm! - to the ongoing 'pumpkin rush', we may find ourselves burried in stocked with excessive amounts of pumpkin leftovers. This soup is the perfect excuse for either getting rid of them... or to buy more pumpkin! The addition of potato brings substance to the cream, while zucchini plays along its squash counterpart for freshness. Infused with real saffron and a hint of ginger, this soup hits a sweet spot between the traditional and the exotic, the savoury and the sweet, and is hence sure to please even the pickiest palate. True flavourful comfort food.

it's freaking snowing on my brunch.

Kaiserschmarrn is a staple dessert in Austria and South Germany, where it recalls sweet memories from a day out skiing in the Alps. Basically a fluffy pancake that is shredded, caramelized, dusted with powdered sugar and typically served with plum or apple compote, it got its name from Kaiser Franz Joseph I of Austria, for his love of it. I am not Kaiser Franz Joseph, but I also love it. I had already had the though of making pumpkin pancakes this satuday, but some enlightenment suddenly came to me that this was what I ought to make: pick a famous recipe and turn it around by tossing pumpkin into it. And here it is. Kaiserschmarrn... reinvented!

'Zwetschgen' (bavarian name, 'abrunhos' in portuguese) are a unique kind of plums, characterized by its elongated shape, dark amethyst peel and ideally golden flesh. For being seemingly less watery than other plums and for their deliciously intense flavour, they are perfect for baking. This cake is a German classic that combines several things that I personally adore, and that I guess are favourites for many of you as well: a buttery yeast dough, an awesome layer of juicy baked fruit, my own very favourite recipe of spiced crumble... plus it's easy to prepare and quicker than a normal bread! Made with seasonal fruits, this recipe couldn't be better suited for this well settled Fall.

Alphabet shaped cookies are astoundingly fun to make... and to eat! You can even write messages or play games like crosswords, soup of letters or scrabble with them! They are perfect for engaging children in the kitchen and this particular batter is plain gorgeous. Plus the lemon and poppy seed combo is an all-time favourite everybody will love. If you feel like it, decorate them with some lemon glaze, but they are already delicious on their own. Appetizing brain exercise, to eat by the handful.

If someone told me they would be baking sugar cookies in a day in which the thermometers rose above 35ºC, I would definitely forever label them as crazy. And yet, ironically, that's exactly what I ended up doing.

So I guess that, just like myself, you like to watch food on the screen. And that's why I've decided to compile my own list with some of the most remarkable silver screen moments featuring food, in a selection that is not exclusive to those pictures we all know too well feature eating, cooking or baking. It's 35ºC outside and maybe even way over it inside your house, you're feeling close to fainting, sweating and panting whenever you have to move a finger... so what now? Just whip youself up this all-natural delicious slush. Luscious, with a vibrant red colour, it's pretty perfect. No need to add colourants.

A couple of days ago, so to speak, I decided I could wait no longer to go back to freezing fruit. I started doing it some years ago when I was at my parents' over the summer, mostly to produce creamy banana ice creams, slowly destroying their blender with rock-like pieces of banana, strawberries, blueberries, or whatever crossed my mind that day. However, since I moved to Germany, I haven't had the chance to use a REAL blender, for all I've got is a feeble cheap hand blender that I bought at the supermarket, which main function is actually spilling soup all around my kitchen. Not funny.
